Sparkling Lemon Spaghetti from Giada De Laurentiis Is “One of the Easiest Pasta Dishes You’ll Ever Make”

There comes a certain point in winter where my mind suddenly turns from craving all things beige—chicken and dumplings, Slow cooked meatAnd mashed potatoes and meat sauce – to everything bright. This tends to show up on quick trips to the grocery store, where I stay in the produce aisle and leave with lots of blood and a cara cara orange.

Fortunately, Giada De Laurentiis has created a dish that brings distinction Acidic pop of lemon To a plate of beige pasta. Lemon pasta is one of her most delicious recipes, and De Laurentiis herself also describes it as “one of the easiest pasta dishes You will ever make it.”

In the name of De Laurentiis She writes on her website, and a lemon spaghetti recipe inspired by a trip to Capri, “a small island near Naples and the Amalfi Coast is a paradise of super blue waters, towering cliffs, and colorful villas overlooking the sea” (which looks especially appealing when I’m sitting in a pile of snow and refrozen sludge outside my apartment window) in Chicago). While traveling, she and her party stopped at a restaurant called Da Paolino, which is surrounded by more than 100 lemon trees.

“Of course, when you’re surrounded by the sweet scent of fresh lemons, that’s all you can think about eating,” De Laurentiis wrote. “So I ordered a simple bowl of spaghetti mixed with olive oil, parmigiana cheese, garlic, and lemon from those wonderful trees. One bite, and I was totally blown away by the balance of flavors. Salty cheese, lime juice, and scented lemon oil all combined to make the most addictive pasta dishes I’ve ever had.”

“I knew I had to figure out how to make it for myself,” she continued.

Excluding cooking oil, salt, and pepper, De Laurentiis’ version contains just four ingredients: the juice and peel of two lemons, chopped basil, a pound of spaghetti and 2/3 cup of grated Parmesan cheese. What’s the secret to turning that limited list of items into something worthwhile? For De Laurentiis, there are two things to keep in mind while finishing off the lemon spaghetti.

“The secret to this dish is to let the pasta sit for a few minutes in the lemon mixture, and be sure to add that pasta water,” she said.
